Herbed Braised Beef with Tomatoes (Brazoles)

Ingredients

 

  • 1 1/2 pounds steak of choice, such as round steak
  • 1 tablespoon ground coriander
  • 2 teaspoons dried oregano, or to taste, crumbled
  • 1 teasppon dried sage
  • 1/2 to 1 teaspoon black pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 6 medium italian plum tomatoes
  • 1 teaspoon sugar
  • 1/2 cup low-sodium beef broth
  • Chopped fresh parsley or cilantro (optional) 

 

Preparation


Preheat oven to 350 degrees
-Trim all visible fat from steak. Cut steak across the grain into 6 equal portions. Set aside
-In a small bowl, mix coriander, oregano, sage, pepper, garlic powder, cinnamon, and salt; rub some of the seasoning mixture into the steaks. 
-Set aside remaining seasoning mixture.
-Place steaks in a baking dish just large enough to hold them.
-Slit tomatoes lengthwise, cutting only about halfway through.
-Pinch to open them slightly so flavors can penetrate.
-Nestle them between the steaks.
-Add sugar to remaining seasoning mixture and sprinkle on the slit tomatoes.
-Pour broth into the dish, being careful not to wash off the seasoning mixture.
-Bake uncovered for 30 minutes. Bast and bake for another 30 minutes more, or until meat is tender, basting occasionally. 
-Sprinkle with chopped parsley or cilantro, if desired.
